Brewing Method
果實經人工精細採收與二次篩選後，進行 100% 去梗 處理（依年份微調）。發酵前進行數天低溫浸皮（Cold Soaking）以提取優雅色澤與果香，隨後利用 原生酵母 於開放式橡木發酵槽中進行自然發酵。發酵期間實施輕柔的淋皮（Remontage）與踩皮（Pigeage）；發酵完成後轉入法式橡木桶陳年 15–18 個月（新桶比例約 30%），不經過濾裝瓶。
