Brewing Method
手工採收後採用 100% 全梗發酵（Whole Cluster），於開口橡木槽中使用原生酵母天然發酵；發酵期間僅進行極輕柔的浸漬（Infusion style，無強烈踩皮或沖壓）。隨後於 500L 至 1,000L 大型舊法式橡木桶與橢圓木槽中熟成約 12–14 個月。不經過濾與澄清，低硫添加。
